Waldo’s Chicken and Beer in Auburn celebrated an official grand opening on Tuesday, Feb. 4. Whether you are a fan of Southern fried chicken or tender rotisserie, this new eatery promises to satisfy your cravings in a fun and inviting atmosphere.
According to Waldo’s website, they understand the “chicken-verse is crowded” but are confident your search for the “perfect bird” ends at Waldo’s. Why, you ask? It’s because Waldo’s specializes in preparing chicken in two ways: Southern Fried and Rotisserie.
Paired with delicious Southern sides and sauces, what kicks the menu up a notch is everything is made from scratch with Waldo’s signature recipes!
The menu
Starting with the fried chicken, it’s all about the brine, breading and everything in between. Soaked in pickle brine overnight, Waldo’s chicken is moist and flavorful with a little kick. After the soak, it’s dipped in buttermilk and hand-breaded.
Do you prefer slow-roasted chicken? Luckily, Waldo’s rotisserie chicken delivers just that! First, it’s soaked overnight in a brown sugar brine. Then it’s hand-rubbed with seasonings and roasted to perfection. Each serving is cut and pulled to order for that hot off-the-fire taste.
Add your choice of tasty sides such as mac n’ cheese, coleslaw, French fries, tomato cucumber salad, white beans, collards or potato wedges.
